Crispy Masala Peanuts Recipe




Masala peanuts are a crunchy, spicy and addictive snack made by coating raw peanuts in a seasoned gram flour (besan) batter and deep frying them. They are a popular tea time snack in India and are also great for parties and festive occasions. Here's how you can make them at home.

Ingredients:

. 1 cup raw peanuts
. 1/2 cup gram flour (besan)
. 2 tbsp rice flour (for extra crispiness)
. 1 tbsp red chili powder
. 1/2 tbsp turmeric powder
. 1/2 tbsp garam masala
. 1/2 tbsp cumin powder
. 1/2 tbsp chaat masala (optional for extra tanginess)
. Salt to taste
. 1 tbsp ginger garlic paste (optional)
. 1 tbsp hot oil (for extra crunch)
. 1/4 cup water (adjust as needed)
. Oil for deep frying

Instructions:

Step 1 : Prepare the Batter

. In a mixing bowl, combine gram flour, rice flour, red chili powder, turmeric, garam masala, cumin powder, chaat masala and salt
. Add ginger garlic paste (if using) and mix well
. Pour in 1 tbsp of hot oil to enhance the crispiness of the coating
. Gradually add water, a little at a time, to form a thick, sticky batter that coats the peanuts well

Step 2 : Coat the Peanuts

. Add the raw peanuts to the batter and mix thoroughly so that each peanut is well coated
. Let the mixture sit for 5-10 minutes to help the flavors infuse

Step 3 : Deep Fry the Peanuts

. Heat oil in a deep pan over medium heat. To check if the oil is ready, drop a small bit of batter into the oil, if it sizzles and rises to the top, the oil is ready
. Drop the coated peanuts into the hot oil in small batches, ensuring they don't stick together
. Fry on medium heat, stirring occasionally, until golden brown and crispy
. Remove with a slotted spoon and place on a paper towel to drain excess oil

Step 4 : Serve & Store

. Allow the masala peanuts to cool completely before storing them in an airtight container
. Enjoy them as a crunchy tea time snack or serve them at parties!

Baking & Air Fryer Options

. Baking : Preheat the oven to 180*C (350*F) Spread the coated peanuts on a greased baking tray and bake for 15-20 minutes, stirring occasionally

. Air Fryer : Spread the coated peanuts in a single layer in the air fryer basket. Air fry at 180*C (350*F) for 10-12 minutes, shaking halfway through

Tips for Perfect Masala Peanuts

. Use rice flour for extra crispiness
. Adding hot oil to the batter enhances crunch
. Fry on medium heat to ensure even cooking
. Store in an airtight container to maintain crispness
