Crispy Onion Kachori Recipe a Spicy and Flaky Delight
Onion Kachori, also know as "Pyaaz Ki Kachori" is a popular North Indian snack, especially from Rajasthan. These deep fried, crispy pastries are filled with a spicy onion mixture, making them a perfect tea time treat. Follow this step by step recipe to make crispy onion kachoris at home.
Ingredients:
For the Dough,
. 2 cups all purpose flour (maida)
. 2 tbsp semolina (sooji) for extra crispiness
. 1/4 cup ghee or oil
. 1/2 tbsp salt
. water (as needed)
For the Onion Filling:
. 2 large onion, finely chopped
. 1 cup gram flour (besan)
. 2 green chilies, finely chopped
. 1 tbsp fennel seeds (saunf)
. 1/2 tbsp carom seeds (ajwain)
. 1/2 tbsp cumin seeds
. 1 tbsp coriander powder
. 1/2 tbsp turmeric powder
. 1/2 tbsp red chili powder
. 1/2 tbsp garam masala
. 1 tbsp dry mango powder (amchur)
. 2 tbsp chopped coriander leaves
. Salt to taste
. 2 tbsp oil
For Frying:
. Oil for deep frying
Step by Step Instructions,
Step 1 : Prepare the Dough
. In a mixing bowl, combine all purpose flour, semolina, salt and ghee
. Rub the ghee into the flour until it resembles breadcrumbs
. Gradually add water and knead into a stiff dough
. Cover and let it rest for 30 minutes
Step 2 : Make the Filling
. Heat 2 tbsp oil in a pan. Add cumin seeds, fennel seeds and carom seeds, Let them splutter
. Add finely chopped onions and saute until translucent
. Stir in green chilies, turmeric, red chili powder, coriander powder and garam masala
. Add garam flour (besan) and roast for 2-3 minutes to remove raw taste
. Season with salt, dry mango powder and chopped coriander leaves
. Let the filling cool completely
Step 3 : Shape and Fill the Kachoris
. Divide the dough into small lemon sized balls
. Roll out each ball into a small disc (about 3 inches in diameter)
. Place 1-2 tbsp of onion filling in the center
. Gather the edges and seal tightly, removing any excess dough at thr top
. Gently flatten the stuffed ball with your palm
Step 4 : Frying the Kachoris
. Heat oil in a deep pan over low medium heat
. Gently slide in the kachoris and fry on low heat until golden brown and crispy
. Flip occasionally for even cooking
. Remove and drain on paper towels
Serving Suggestions:
. Serve hot with tamarind chutney, mint chutney or yogurt
