Soft and Fluffy Rava Idli Recipe



Rava Idli is a quick, healthy and delicious South Indian dish made with semolina, Unlike traditional idli, which requires fermenting rice and lentils, rava idli is an instant version that uses curd and fruit dalt or baking soda for softness, It's perfect for breakfast, snacks or even a light dinner

Ingredients:

For the Idli Batter,

. 1 cup rave (semolina)

. 1/2 cup curd

. 1/2 water

. 1 tbsp fruit salt or 1/2 tbsp baking soda

. 1 tbsp salt 

For Tempering:

. 1 tbsp oil or ghee

. 1/2 tbsp mustard seeds

. 1/2 tbsp cumin seeds

. 1 tbsp urad dal

. 1 tbsp chana dal

. 1 tbsp cashews

. 1 green chili, finely chopped

. 1 inch ginger, grated

. 5-6 curry leaves, chopped

For Garnishing (Optional):

. 2 tbsp grated carrot

. 2 tbsp chopped coriander leaves

Instructions:

1. Roast the Semolina

. Heat a pan on medium flame and dry roast the semoline for 3-4 minutes until aromatic, Stir continuously to prevent burning

. Transfer it to a bowl and let it cool

2. Prepare the Tempering

. In the same pan, heat oil or ghee

. Add mustard seeds and let them splutter

. Add cumin seeds, urad dal and chana dal, Saute until golden

. Add cashews, green chilies, ginger and curry leaves, Saute for another minutes

. Pour this tempering over the roasted semolina and mix well

3. Prepare the Batter

. Add curd, salt and water to the semolina mixture

. Mix well to form a thick batter, Let it rest for 15-20 minutes to allow the semolina to absorb moisture

. After resting, if the batter is too thick, add a little more water to reach a pourable consistency

4. Add the Rising Agent

. Just before steaming, add eno or baking soda to the batter and mix gently. You well see bubbles forming

5. Steam the Idlis

. Grease the idli molds with a little oil

. Pour the batter into the molds, filing them about 3/4 full

. Steam in an idli steamer or pressure cooker (without a whistle) for 12-15 minutes on medium heat

. Check with a toothpick if it comes out clean, the idlis are ready

6. Serve and Enjoy

. Let the idlis cool for a minute before unmolding

. Serve hot with coconut chutney, tomato chutney or sambar

Tips for Soft and Fluffy Rava Idli

.Use fresh curd for a slight tangy flavor and better softness

. Do not overmix after adding Eno or baking soda, it may affect fluffiness

. Roasting rava ensures a non sticky, light texture

Resting time helps the rava absorb moisture and avoid dry idlis
