Dal Khichdi Recipe : A Comforting One Pot Meal



Dal Khichdi is a wholesome and comforting Indian dish made with lentils, rice and aromatic spices. It is easy to digest and packed with nutrients, making it a popular choice for a light meal, especially when feeling under the weather or craving something simple yet flavorful.

Ingredients:

For the Khichdi,

. 1/2 cup rice (any variety, preferably basmati or short grain)

. 1/4 cup yellow moong dal (or any lentils or choice)

. 2 cups water

. 1/2 tbsp turmeric powder

. 1/2 tbsp salt

. 1 tbsp ghee or oil

For the Tempering (Tadka)

. 1 tbsp ghee

. 1/2 tbsp cumin seeds

. 1 tbsp ginger (grated)

. 1 green chili (chopped, optional)

. 1/2 onion (chopped)

. 1 small tomato (chopped)

. 1/4 tbsp red chili powder

. 1/2 tbsp garam masala

. 1 tbsp coriander powder

. Fresh coriander leaves (for garnish)

Step by Step Instructions

Step 1 : Rinse and Soak

. Wash the rice and moong dal thoroughly until the water runs clear

. Soak them together for about 15-20 minutes for better cooking results

Step 2 : Cook the Khichdi

. In a pressure cooker or pot, add the soaked rice and dal

. Pour in 2 cups of water and add salt and turmeric powder

. Close the lid and cook for 2-3 whistles or until the rice and dal are soft in an open pot (about 15-20 minutes)

. Once done, mash lightly for a creamy consistency

Step 3 : Prepare the Tempering (Tadka)

. Heat ghee in a pan, Add cumin seeds and let them splutter

. Add ginger, green chili and chopped onion. Saute until onion turn golden

. Stir in chopped tomatos and cook until soft

. Add red chili powder, coriander powder and garam masala, Mix well

Step 4 : Combine and Serve

. Pour the tempering oven the cooked khichdi and mix well

. Garnish with fresh coriander leaves

. Served hot with yogurt or papad

. Vegetable Khichdi: Add chopped carrot, peas, beans or potatos for extra nutrition

. Protein Boost: Add paneer cubes or cooked chicken pieces
