Chole Bhature Recipe a Classic North Indian Delight
Chole Bhature is a popular North Indian dish made of spicy chikpea curry (chole) and deep fried, fluffy bread (bhature). It's a beloved street food, especially in Punjab and is best enjoyed with pickles, onion and a glass of lassi.
Ingredients:
For Chole (Chickpea Curry),
. 1 cup chickpeas (soaked overnight or for 8 hours)
. 2 medium onions (finely chopped)
. 2 medium tomatoes (pureed)
. 1 green chili (chopped)
. 1 tbsp ginger garlic paste
. 1 bay leaf
. 1 black cardamom
. 2 green cardamoms
. 1 inch cinnamon stick
. 2 cloves
. 1 tbsp cumin seeds
. 1 tbsp coriander powder
. 1 tbsp garam masala
. 1/2 tbsp turmeric powder
. 1 tbsp red chili powder
. 1/2 tbsp amchur (dry mango powder)
. 1 tbsp chole masala (optional)
. Salt to taste
. 2 tbsp oil or ghee
. 2 cups water
For Bhature (Fried Bread):
. 2 cups all purpose flour (maida)
. 2 tbsp semolina (sooji)
. 1/2 cup yogurt
. 1/2 tbsp baking soda
. 1/2 tbsp salt
. 1 tbsp sugar
. 2 tbsp oil
. Water (as needed)
. Oil for deep frying
Instructions:
Step 1 : Prepare the Chole (Chickpea Curry)
. Boil the Chickpeas: Drain the soaked chickpeas and pressure cook them with 2 cups of water and a little salt for 4-5 whistles or until soft. If using canned chickpeas, drain and rinse them well
. Prepare the Masala: Heat oil in a pan, add cumin seeds, bay leaf, black cardamom, green cardamoms, cinnamon and cloves. Saute for a few seconds until fragrant
. Add Onion & Tomatoes: Add chopped onions and saute until golden brown. Add ginger garlic paste and green chilies, saute for another minute. Pour in tomato puree and cook until oil separates
. Spice it Up: Add turmeric, red chili powder, coriander powder, salt and chole masala, Mix well
. Cook the Chickpeas: Add the boiled chickpeas along with some water from the pressure cooker. Let it simmer for 10-15 minutes. Add garam masala and amchur powder for extra flavor. Mash some chickpeas for a thicker consistency
Step 2 : Prepare the Bhature
. Make the Dough: In a large bowl, mix flour, semolina, baking soda, salt and sugar. Add yogurt and oil. Knead into a soft dough using water as needed. Cover and let it rest for 2 hours
. Shape the Bhature: Divide the dough into equal portions, roll into balls and flatten into round or oval shapes using a rolling pin
. Fry the Bhature: Heat oil in a deep pan, Fry each bhatura on medium high heat until puffed and golen brown, Drain on paper towels
Serving Suggestions:
Serve hot chole with freshly fried bhature, sliced onions, green chilies and a wedge of lemon, Pair it with pickle or lassi for an authentic Punjabi meal.
