 Fada Lapsi Recipe (Cracked Wheat Dessert)



Fada lapsi is a traditional Gujarati dessert made with cracked wheat, ghee, sugar, and flavored with cardamom. It is often prepared during festivals, celebration, and special occasions. This dish is loved for its nutty flavor and soft, crumbly texture.

Ingredients:

1. 1cup cracked wheat (fada or broken wheat)

2. 1/2 cup ghee (clarified butter)

3. 1 cup suger

4. 3 cups water

5. 1/4 teaspoon cardamom powder

6. 2 tablespoon chopped nuts (like almonds, cashews)

7. 2 tablespoon raisins (optional)

8. A pinch of saffron (optional)

Roast The Cracked Wheat:

1. Heat 2 tablespoons of ghjee in a deep pan or kadhai on medium heat.

2. Add the creaked wheat and roast it on low to medium flame, stirring continuosly, until it turns golden brown and aromatic. this will take about 10-20 minutes.

Prepare The Sugar Syrup:

1. In a separate saucepan, bring 3 cups of water to a boil.

2. Once bpiling, add the sugar and stir until it dissolves completely. Reduce the flame and let it simmer.

Cook The Fada:

1. Pour the sugar syrup into the roasted fada, stirring constantly to avoid lumps.

2. Cover and cook on a low flame, allowing the fada to absorb the syrup. Stir occasionally to prevent it from sticking to the pan. This should take around 15-20 minutes until the wheat is soft and cooked through.

Add Flavors:

1. Once the water is absorbed and the fada is cooked, add the remaining ghee, cardamom powder, and saffron (if using).

2. Stir well and cook for another 5 minutes, allowing the ghee to coat the mixture.

Garnish and Serve:

1. Add chopped nuts and raisins. Mix everything well and cook for another 2-3 minutes.

2. Serve the fada lapsi hot, garnished with additional nuts or a sprinkle of cardamom powder if desired.

Tips:

1. You can adjust the sweetness by adding more or less sugar as per your taste.

2. The texture of lapsi can be varied by adding more or less water depending on how soft you want the final dish to be.

3. Ghee adds a rich flavor, but you can reduce the quantity if you prefer a lighter version.

The delightful dessert is perfect for festive occasions and is often enjoyed warm. It has a wholesome and mildly sweet taste, making it a comforting treat for all ages.
